The Sebastiani family mantra is to over-deliver. They believe that wine can be delicious and yet within reach. The aptly named Aquinas label brings this dichotomy into sharp focus. The 2011 Cabernet Sauvignon is sourced from Napa Valley fruit, and while a difficult vintage, the flavor profile here is excellent. Aromatics run from vanilla, toast, herbs, black cherry, pencil lead and cookie spices. I love the ample amount of wood used here. It shows class. The medium-bodied mouth follows suit with solid structure, firm acids and micro-fine tannins. Good length too! In a word, delicious. Serve with all things beef. Costs about $20.
